Vineyard and terroir
The Sangiovese comes from the organically cultivated Le Cinciole vineyards at 470 m above sea level. The vines face south-east and grow on Galestro clay-limestone schist over Pietraforte sandstone.
Grapes
100% Sangiovese.
Vinification
The grapes are harvested by hand at a ripeness intended to preserve finesse and aromatic potential while avoiding excessive alcohol. After destemming, they remain briefly in the press for gentle skin contact and are then delicately pressed. Only the free-run must is used, undergoing white-wine vinification at controlled temperature.
Ageing
A short period in stainless-steel vats precedes bottling in the following spring, during the waning moon.
Technical data
Average annual production is 4,000 bottles.
Tasting profile
Floral aromas lead into delicate fruit and distinct mineral notes. The palate is fragrant and fresh, with savoury character, elegance, delicacy and persistence.
