Vineyard and terroir

The grapes come from rediscovered vineyards, including the estate’s oldest plots, on rich, fertile soils along the Isonzo River. During the month before harvest, the bunches are thinned by hand to limit yields to 1.5–1.8 kg per vine and increase extract concentration.

Grapes

Selected Pinot Bianco, Friulano and Malvasia are blended with a small proportion of Traminer Aromatico.

Vinification

The fruit is picked by the estate’s most experienced harvesters. On arrival at the winery, the grapes are crushed and gently pressed. The must is cooled to 13 °C and settles naturally for 20 hours before the clear portion is transferred for primary fermentation. Pinot Bianco ferments in 500-litre tonneaux, half new and half in their second year of use, contributing delicate spice while keeping oak notes subtle. The other varieties ferment in stainless-steel tanks at a controlled 18 °C.

Ageing

The wine matures until the end of June, followed by four months in bottle before release.

Tasting profile

Elegant, with subtle oak notes and delicate spicy nuances.

Label / history

Sontium is the Latin name for the emerald-green Isonzo River, which crosses the wine’s region in northeastern Italy.
