Vineyard and terroir
The vineyards are in Salento, Puglia, amid an agricultural landscape also devoted to olives and wheat. Sandy and clay soils, abundant sunshine and cool sea breezes support ripening while helping the grapes retain aromatic character and vibrant acidity.
Grapes
100% Negroamaro.
Vinification
The grapes are destemmed and crushed. Maceration lasts 8–10 days at controlled temperature, with regular pump-overs. After racking, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine is refined for 4–5 months in used American and French oak barriques.
Tasting profile
Ruby red with purple hues. The bouquet is intense, vinous, spicy and fruity, with blackcurrant and other dark-berry notes. The palate is medium-bodied and velvety, balancing freshness with warmth before a long, savoury finish.
Serving and pairing
Serve at 16–18°C. Its structure and aromatic intensity suit traditional Puglian food, particularly orecchiette with broccoli rabe and goat cheese.
