Vineyard and terroir
The grapes grow between Sava and Manduria in Alto Salento, within the heart of the Primitivo di Manduria production zone. Sunshine and proximity to the Ionian Sea are important influences. The vineyards are traditional bush-trained alberelli more than 30 years old.
Grapes
100% Primitivo.
Vinification
The grapes are destemmed and crushed, followed by 8–10 days of controlled-temperature maceration with regular pump-overs. After draining, malolactic fermentation takes place in stainless-steel tanks.
Ageing
The wine matures for 6–8 months in American and French oak barriques.
Tasting profile
Ruby red with violet nuances. The intense bouquet combines cherry and blackberry with mint tobacco and light spice. The palate is spicy and gently sweet in impression, closing on cocoa and coffee notes. It is persistent and capable of developing for a further 10 years.
Serving and pairing
Serve at 16–18°C. Pair with flavourful first courses such as pasta with ragù, red-meat dishes, moderately spicy roasts and semi-aged cheeses.
