Vineyard and terroir
The vineyards lie a short distance east of Taranto on the Salento peninsula. Their red soil is rich in iron oxides and rests above calcareous rock. Breezes from the Ionian Sea help preserve delicate flavours and a fresh, persistent palate.
Grapes
Sangiovese, Malvasia Nera and Aglianico.
Vinification
The grapes are destemmed and crushed. Maceration lasts 8–10 days at controlled temperature, with regular pump-overs. The wine is then drained from the skins and completes malolactic fermentation in stainless-steel tanks.
Tasting profile
Bright ruby red. The nose is intense and fruit-led, with red-fruit notes. Medium-bodied and balanced, with an approachable, ready-to-drink style.
Serving and pairing
Serve at 16–18°C. Pair with risotto, baked pasta dishes, red meat, lamb and savoury cheeses. Aubergine, mushrooms and smoked ricotta are also suggested.
