Vinification
The grapes are harvested in September and undergo a short cold maceration. The must then flows by gravity into steel tanks, where it ferments at low temperature.
Ageing
The wine remains on its lees at low temperature until bottling.
Label / history
The name recalls Torgiano’s Roman origins and a tower built in honour of the two-faced god Janus (Giano). The label depicts Perugia’s thirteenth-century Fontana Maggiore, whose carvings include scenes of grape harvesting and processing.
