Vineyard and terroir
The grapes are grown according to sustainable farming principles intended to respect the terroir.
Vinification
The grapes are harvested by hand and gently pressed as whole berries, with the first and second press fractions kept separate. Fermentation takes place in temperature-controlled stainless-steel tanks with selected yeasts. The temperature is gradually lowered to 10 °C to prevent malolactic fermentation. The wine is then bottled and sealed for secondary fermentation.
Ageing
The wine ages on its lees for at least 24 months.
