The grapes are grown using sustainable farming practices.
Vinification
The grapes are harvested by hand, gently whole-cluster pressed and separated into fractions. Fermentation takes place in temperature-controlled stainless-steel tanks with selected yeasts. The temperature is gradually reduced to 10 °C to prevent malolactic fermentation. Tirage liqueur is then added before the wine is bottled and sealed for secondary fermentation.
Ageing
The wine ages on its lees for 24 months.
