Vineyard and terroir
The fruit comes from hillside vineyards in the villages of Farra d’Isonzo, Oslavia and Cormòns, within the Collio DOC area. Formed during the Eocene period, the terrain consists of alternating sandstone and loam rock containing limestone and clay. These former ocean-floor deposits create an impermeable soil from which rainwater runs off readily, limiting erosion and preventing standing water. The vines are trained using the Guyot system, and the grapes are harvested by hand.
Grapes
95% Chardonnay and 5% Pinot Grigio.
Vinification
Gentle pressing extracts approximately 40% of the grapes for the sparkling-wine base. Most of the must ferments in stainless-steel vats, while a small proportion ferments in oak barrels. The cuvée is subsequently assembled, with tirage performed several months after the harvest.
Ageing
The wine remains on its lees for at least three years before disgorgement.
Technical data
Quality sparkling wine. Alcohol is approximately 12.5%. Available bottle formats are 0.75 l, 1.5 l and 3.0 l.
Tasting profile
The color is an intense, bright straw yellow. Its complex bouquet combines Golden apple and dried-fruit notes with the fragrance of yeast. The palate is persistent, harmonious and silky.
