Vineyard and terroir
The Chardonnay comes from Masseria Maìme in Upper Salento, near San Pietro Vernotico in the province of Brindisi. The coastal estate's vineyards lie between woodland and pine forest and extend toward the sea.
Grapes
100% Chardonnay.
Vinification
The grapes are brought to the cellar and gently pressed. The resulting must is chilled and held at 10 °C for approximately 24 hours to clarify naturally. Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks at 16 °C to preserve the variety's aromatic character.
Ageing
The wine remains in stainless steel until bottling.
Technical data
The 2025 vintage has 12.5% alcohol by volume and is offered in a 750 ml bottle.
Tasting profile
Bright straw yellow with greenish highlights. The nose presents fresh white-fleshed fruit, nectarine, green apple and pineapple, complemented by orange blossom, jasmine and citrus nuances. The palate is fragrant and savory, with pleasant freshness and easy drinkability.
Serving and pairing
Serve at 8–10 °C with roasted fish, fish risotto or white meats.
