Vineyard and terroir

Carrubo is produced from selected Primitivo grapes grown at Tenuta Carrubo in the countryside around Fragagnano, Taranto, within the Primitivo di Manduria DOC area. The estate lies at approximately 120 m and comprises 40 hectares of vineyards. Its calcareous, characteristically red soils and hot summers are moderated by marked differences between daytime and nighttime temperatures. Historic vineyards are trained as alberello bush vines, while newer rows use vertical trellises.

Grapes

100% Primitivo.

Vinification

The grapes are harvested slightly overripe and gently crushed. Maceration on the skins is managed with gentle pump-overs at a temperature no higher than 27 °C. Malolactic fermentation takes place in stainless steel.

Ageing

The wine matures in 500 L French-oak tonneaux, partly new and partly second-fill, followed by eight months in bottle before release.

Technical data

The 2020 vintage has 16% alcohol by volume and is offered in a 750 ml bottle.

Tasting profile

Carrubo 2020 is an intense ruby red. Its rich, complex aroma combines plum, cherry preserve and candied fruit with sweet-spice impressions of licorice, vanilla, chocolate and cinnamon. The palate is soft and broad, with elegant tannins supported by pleasant freshness. The finish is long, with a varietal fruit aftertaste.

Serving and pairing

Serve at 16–18 °C with mature cheeses, dark chocolate or rich, succulent meat dishes.
