Vineyard and terroir
Roycello is made from Fiano grown in its namesake plot at Masseria Maìme near San Pietro Vernotico, in the province of Brindisi. The coastal estate's vineyards extend between woodland and pine forest toward the sea.
Grapes
100% Fiano.
Vinification
The fruit is harvested upon reaching full aromatic ripeness, destemmed and gently pressed. The must is chilled to 10 °C for approximately 24 hours to settle and clarify naturally. Alcoholic fermentation takes place in temperature-controlled stainless-steel tanks at 16 °C.
Ageing
The wine remains on its lees in stainless steel for approximately four months before bottling.
Technical data
The 2025 vintage has 12% alcohol by volume and is offered in a 750 ml bottle.
Tasting profile
Straw yellow with greenish highlights. The aroma combines white-fleshed fruit, pineapple, peach and pear with lime, grapefruit and jasmine. The palate has pronounced freshness and savory character.
Serving and pairing
Serve at 10–12 °C with fish-based first courses, shellfish, langoustines, octopus, baked fish, young cheeses or white meats.
Label / history
Roy and the smaller neighboring Roycello are two plots at Masseria Maìme. Their names recall the Eurasian cranes that frequented the wetlands of the Cerano Woods during the 1930s and 1940s; the birds' dialect name, “Roy,” imitated their call. Roycello has carried SQNPI integrated-production certification since 2024.
