Vineyard and terroir

The fruit is selected from Masseria Maìme at San Pietro Vernotico in Salento. The coastal estate lies between woodland and pine forest near the Adriatic Sea.

Grapes

Negroamaro with a small amount of Syrah.

Vinification

The grapes are destemmed and gently crushed on arrival. Five days of cold pre-fermentation maceration at 5 °C extract varietal aromas, colour and softer phenolic material. The must is then racked and fermented without skins at 18 °C.

Ageing

The wine rests for several months in stainless steel before bottling and release.

Rosso IGT Salento. Alcohol: 12.5% vol. Bottle size: 750 ml.

Tasting profile

Ruby red with violet highlights. Fresh red-fruit aromas centre on raspberry and Ferrovia cherry, followed by violet and lavender. The palate is fresh and savoury, with easy drinkability and a persistent fruity finish.

Serving and pairing

Serve chilled at 6–8 °C with finger food, red-sauce pizza or raw fish.

Label / history

Fichimori was conceived as a red wine for chilled service. Its name refers to a local fig whose deep red-violet skin approaches the colour called moro in the local dialect, linking the wine with Salento's historic reputation as the “garden of Italy.”
