The fruit comes from the company’s vineyards in Apulia.
Vinification
The grapes are harvested at optimal ripeness and gently crushed at the winery. Traditional vinification involves skin maceration and fermentation in temperature-controlled steel tanks. Fermentation is stopped by rapidly lowering the temperature, retaining some residual sugar.
