Vineyard and terroir
The grapes are grown in the Mirabella Eclano area on restored ancient, ungrafted vines. The southwest-facing vineyard lies at approximately 400 metres above sea level and has deep, well-drained loamy-sandy soils. The vines are 20 years old on average.
Vinification
The grapes are harvested by hand in late October. Fermentation and approximately 20 days of skin contact take place in stainless steel tanks at a controlled temperature of 22–24 °C.
Ageing
The wine matures for 12 months in French oak barrels, followed by six months in bottle in the winery’s cellars.
