Vineyard and terroir
The wine combines selected fruit from two contrasting estates. Manocalzati has medium-textured clay-limestone soils, while Montefalcione has loose, sandy soils of volcanic origin. The sites average 550 m above sea level. Vines are trained vertically and Guyot-pruned, average 20 years of age and are planted at approximately 4,000 vines/ha. Yields are about 60 q/ha or 1.5 kg/vine.
Grapes
100% Fiano.
Vinification
The grapes are harvested manually in mid-October. Classic white vinification takes place in stainless steel at a controlled 16–18°C. Approximately 10% of the wine ferments in used barriques. Malolactic fermentation rounds and softens the profile and contributes persistence.
Ageing
The principal component remains on its full fermentation lees for approximately 24 months, developing savoury character and longevity. The approximately 10% fermented in used barriques also matures there for 12 months. Bottle ageing lasts at least 18 months.
Tasting profile
Light straw yellow with subtle green reflections. The broad, complex bouquet shows flint and saline nuances followed by fresh almond, citron and field herbs. Agile on the palate, with flavours of ripe apple, oyster, lightly toasted almond and smoke, supported by striking freshness.
Serving and pairing
Serve at 14–15°C. Pair with buffalo mozzarella, fish and shellfish starters; seafood pasta and risotto; preparations based on legumes and vegetables; white meats, grilled fish, and fresh or mature cheeses. Cellaring potential is 20 years or more.

Inspired by the great Fiano wines of the 1970s and 1980s, the selection of grapes from the contrasting Montefalcione and Manocalzati estates balances freshness and structure while emphasizing savoury and mineral qualities.
