Vineyard and terroir
100% Moscato from Vinchio, grown in loose soil tending toward limestone. Following summer thinning, slightly overripe grapes are harvested manually in mid-September and placed in perforated 5 kg crates.
Vinification
Only intact, loosely packed bunches are selected. The crates spend approximately two months in a drying room under controlled temperature, humidity and ventilation, allowing dehydration to concentrate sugars and aromas. The dried grapes are softly pressed, and the must is transferred to steel tanks for cold settling. Fermentation takes place over several months in new 400 L French oak tonneaux. Malolactic fermentation and several months of bâtonnage on the lees follow.
Ageing
The wine matures for approximately 6–8 months in the same 400 L French oak tonneaux, which are toasted with hot water. Bottling normally occurs around August following the harvest, followed by at least one year of bottle maturation before release.
Technical data
Alcohol: 13.5–14%. Limited production: 700–800 bottles in 0.375 L format.
Tasting profile
Intense yellow with golden reflections. The nose is fine, concentrated, floral and persistent, with citrus and apricot. The palate is full-bodied, aromatic, savoury, balanced and persistent, with the structure for extended ageing.
Serving and pairing
Pair with mature or blue cheeses, foie gras and pastries.
