Vineyard and terroir

The vineyard lies in the Santa Rosalia district of Alba, on calcareous soil.

Grapes

100% Dolcetto. The variety’s name is linked to the sweetness of its berries, and the wine is presented as a traditional everyday table wine of the Langhe.

Vinification

Following summer green harvesting, the grapes are picked by hand in September into perforated 25 kg crates. They undergo further manual selection on a vibrating table before soft pressing. Vinification lasts 4–6 days in temperature-controlled stainless-steel tanks fitted with automated pump-over and punch-down systems, emphasizing a pure, crisp fruit expression.

Ageing

Malolactic fermentation follows racking. The wine matures for 4–6 months in stainless-steel tanks, with possible micro-oxygenation. It is bottled in the spring after harvest and rests for at least one month before release.

Technical data

Alcohol: 13–13.5%.

Tasting profile

Intense ruby red with violet reflections. The Italian technical text describes a broad, fruity and gently vinous nose rich in flowers and ripe fruit, while its English rendering emphasizes raspberry and rose. The introductory description adds crisp cherry and morello cherry. The palate is dry and harmonious, ending with the light almond note characteristic of the variety.

Serving and pairing

Suitable with meat main courses or throughout a meal.
