Vineyard and terroir

The fruit comes from the less sunny, cooler northern slope of the small Cascina Nuova hill, where the estate is based, and from cooler sites at Castelletto di Monforte. The vineyards were planted in the early 2000s and are trained using the Guyot system. These cooler locations produce particularly juicy grapes and shape a light, velvety Dolcetto intended to be enjoyed while young and fresh.

100% Dolcetto.

Vinification

The grapes macerate on their skins in temperature-controlled stainless-steel tanks for approximately four days. They are then pressed, and alcoholic fermentation is completed in stainless steel over approximately 20 days. Malolactic fermentation also takes place in stainless steel under controlled temperature conditions.

Ageing

The wine remains in stainless steel until the summer following harvest. It is bottled without fining or filtration.

Tasting profile

Intense ruby red with deep violet hues. The broad, floral nose combines an appealing vinous character with distinct violet and bonbon aromas. The palate is fresh, soft and smooth, with overall balance and light tannins. Youthful vegetal notes are integrated with the wine’s alcoholic warmth. The intended style recalls an immediate, straightforward Dolcetto of the past.

Serving and pairing

Serve at 16–18°C. Its initial freshness can be enjoyed first, followed by the gradual evolution of its aromas as the wine warms in the glass.

Ageing potential

Best enjoyed during the first years after release, though it may acquire surprising nuances after several years in bottle. Magnum format is also available.
