Vineyard and terroir
The fruit comes from Montemaggio’s oldest vineyards, situated at 450–600 m above sea level. A wide difference between daytime and nighttime temperatures helps the grapes develop intense aromas.
Grapes
The Sangiovese grapes are carefully selected.
Vinification
Harvest takes place in the second half of October. Fermentation and maceration are carried out at no more than 28 °C for 28–30 days, followed by malolactic fermentation in large oak barrels.
Ageing
The wine remains in large oak barrels for 24–30 months.
Serving and pairing
Decant for at least one hour before serving.
