Vineyard and terroir
The grapes are grown in Manduria at 100 m above sea level on medium-textured clay-limestone soils.
Vinification
The grapes are harvested late, in October. Vinification includes cold maceration, fermentation with selected yeasts and malolactic fermentation.
Ageing
The wine ages for at least 12 months in new 225 L French oak barriques.
