Vineyard and terroir
The Pinot Noir vineyards lie in the Oltradige at 350–450 m with a south-west exposure. Their compact, impermeable morainic soil was formed by sediments deposited during the Ice Age. The Mediterranean climate combines hot summers, mild winters and the Ora, the warm afternoon wind arriving from Lake Garda.
Grapes
100% Pinot Noir.
Vinification
The grapes are harvested by hand and carefully destemmed. The must ferments in stainless-steel tanks with gentle maceration, followed by malolactic fermentation.
Ageing
Seven months in 40 hl wooden barrels.
Tasting profile
A moderately intense red with ruby reflections and medium depth. Raspberry and cherry aromas are underlined by black pepper. The palate is full and juicy, with fresh balance and a persistent finish.
Serving and pairing
Serve at 16–18 °C with pasta alla genovese or Milanese calf’s liver. Store at 10–13 °C in a cool place with at least 60% humidity.
