Vineyard and terroir
The Chardonnay vineyards surround the Baron Salvadori estate in Magrè, occupying a gentle, south- to south-east-facing slope at 220–350 metres. Their white calcareous gravel soils contain well-aerated humus. The Mediterranean conditions bring hot summers and mild winters, moderated by the Ora, a warm afternoon wind arriving from Lake Garda.
Grapes
100% Chardonnay.
Vinification
The grapes are picked by hand and pressed as whole clusters. The must settles for 30 hours at a cool temperature before fermentation in small oak barrels. Malolactic fermentation follows.
Ageing
The wine matures on its fine lees for 12 months, followed by a further two years in bottle.
Tasting profile
Bright straw yellow with golden highlights and considerable colour depth. The clean aroma combines Abate pear and kiwi with an intense spicy undertone. The palate is full-bodied, deep and savoury, finishing with notable persistence.
Serving and pairing
Serve at 10–12 °C with canederli in broth or umbrine tartare. Store at 10–13 °C in a cool place with at least 60% humidity.
