Vineyard and terroir
The east- and south-east-facing vineyards lie in Nalles at 330–400 metres above sea level. The soil is a 150-metre-deep alluvial fan formed by the Sirmian and Nalles streams, comprising 80% limestone gravel and 20% porphyry rubble. Conditions range from continental to sub-Mediterranean, with warm days and cool nights.
Grapes
100% Sauvignon Blanc.
Vinification
The grapes are harvested by hand. The clarified must ferments at low temperature for approximately three weeks in stainless-steel tanks.
Ageing
The young wine matures on its lees for a further seven months.
Tasting profile
Golden straw yellow with good colour depth. Aromas of white-fleshed nectarine, chinotto and elderflower are layered with aromatic herbs. The palate is fresh, taut and tangy, with a persistent finish.
Serving and pairing
Serve at 10–12 °C with prawn and Gorgonzola risotto or ricotta tortelloni dressed with sage butter. Store in a cool place at 10–13 °C with at least 60% humidity.
