Vineyard and terroir
The Schiava vines grow on the steep slopes of Santa Maddalena near Bolzano, at 250–350 m above sea level and with south to south-eastern exposure. Their roots penetrate gravelly, well-aerated porphyry soil. The Mediterranean climate brings very hot summers and mild winters.
Grapes
100% Schiava.
Vinification
The grapes are harvested by hand and carefully destemmed. Fermentation takes place in stainless-steel tanks with gentle pumping over, followed by malolactic fermentation.
Ageing
The wine matures for seven months in 80 hl wooden barrels.
Tasting profile
Pale red with copper highlights and good colour depth. Fresh aromas evoke undergrowth, blackberry, blueberry and pepper leaf. The palate is fresh, juicy and full-bodied, with a light almond note in the finish.
Serving and pairing
Serve at 14–16 °C with South Tyrolean hash made with meat, potatoes and onions, or with venison stew. Store in a cool place at 10–13 °C with at least 60% humidity.
