Vineyard and terroir
The fruit comes from the Tanca S'Arai vineyard, on clay and limestone soils. The vines are 80 years old on average, and yields are 70–80 quintals per hectare.
Grapes
Cannonau, Carignano and Bovale are each vinified separately and only then blended.
Vinification
The grapes are destemmed and crushed, then macerated for 8–10 days. Fermentation takes place in stainless steel tanks at 20 °C. The wines are clarified and left to settle for several days before blending.
Ageing
The blend spends about a month in concrete tanks, then 10 months in French oak barriques of first, second and third use. After bottling it rests for 6 months in the winery's cellars.
Label / history
Salvatore Pala founded the winery in Sardinia in 1950. His sons Mario and Enrico now run it, and they have upgraded the equipment and made the winery a modern operation. Pala owns five vineyards, located between 200 metres and several kilometres from the estate. The grape varieties for each site are selected to suit its soil and climate.
