Vineyard and terroir
The grapes come from the Bric Ginestra vineyard, on clay-limestone soils at 300–350 m above sea level. The vines are 20–22 years old.
Vinification
Harvest is entirely by hand, once the grapes reach optimal ripeness, usually in the first ten days of October. After crushing, the must macerates for 10–12 days in special tanks designed to let the compounds in the grape skins be released continuously.
Ageing
After ageing, the wine is usually bottled at the end of winter in the second year after the harvest.
