Vineyard and terroir
The organically grown fruit comes from Torre Mora's two vineyards at Rovittello and in the municipality of Linguaglossa, on Mount Etna's northeastern slope. The sites lie at 600–700 metres above sea level and have mineral-rich volcanic soils, with pronounced differences between daytime and nighttime temperatures. The vines are 10–25 years old.
Vinification
The grapes are harvested in early October, then destemmed and gently crushed. They undergo 24 hours of cold maceration followed by a seven-day maceration. Alcoholic fermentation and spontaneous malolactic fermentation take place in stainless-steel tanks.
Ageing
The wine ages for three months in 30 hl barrels.
Tasting profile
The bouquet is attractive, and the palate is notably elegant.
Label / history
“Cauru” means “hot”, referring to the warmth and energy associated with Mount Etna's volcanic soils.
