Vineyard and terroir

The fruit comes from Rovittello, in Contrada Dafara Galluzzo on Mount Etna. Torre Mora has 13 hectares of organically managed vineyards. The Chiuse line focuses on individual Etna crus, locally called contrade, whose old boundaries are marked by traditional dry-stone walls.

Grapes

95% Nerello Mascalese and 5% Nerello Cappuccio.

Ageing

The wine matures for 18 months in first-use 500 L tonneaux, followed by nine months in bottle.

Etna Rosso DOC. Alcohol: 13.5%. Bottle format: 0.75 L.

Tasting profile

Deep ruby to purple-red in colour. The bouquet combines mulberry, strawberry preserve, carob, cedar and cocoa. Coffee and blueberry emerge on the palate, beginning with a soft, velvety texture before developing a fine, polished tannic frame. Anise, Mediterranean herbs and balsamic nuances lead into a long, spicy finish.

Serving and pairing

Serve at 18–20°C with meat dishes or truffle risotto.

Label / history

The name Chiuse derives from the French clos, historically used for vineyards enclosed by walls. Here it also evokes the dry-stone walls defining the ancient Etna vineyard parcels.
