Vineyard and terroir
The grapes grow on hillsides at 300 m above sea level. The volcanic soils are rich in basalt and tuff dating from the Eocene period, and the vineyards are farmed organically.
Vinification
The grapes are harvested into small crates and taken to the winery, where they are laid by hand on bamboo racks. They dry naturally until the end of February, losing at least 25% of their original weight and concentrating their sweetness, before fermentation.
Ageing
The wine ages for around two years in 2,500-litre oak barrels, followed by six months in bottle.
Label / history
Le Colombare has been produced by generations of the Pieropan family. It is made in small quantities and only in favourable vintages.
