Vineyard and terroir
The fruit comes from the Barbagalli area on the northern side of Mount Etna, at an altitude of 900 metres. The vines are 80–100 years old.
Grapes
The grapes are selected before vinification.
Vinification
The grapes are harvested by hand in mid-October, gently pressed and macerated on the skins for 18 days. Malolactic fermentation occurs naturally.
Ageing
The wine matures for 20 months in lightly toasted French oak barrels.
