Vineyard and terroir
The organic Moscato Bianco fruit grows in sunny vineyards in Noto, on white soils of limestone marl and chalk that impart freshness and mineral character.
Vinification
The grapes are harvested by hand in August, then chilled, sorted, destemmed and pressed. The must settles statically at 7–8 °C for 3–4 days before fermenting in steel tanks at approximately 15 °C for 20–25 days. Low-temperature handling and the avoidance of wood preserve varietal character and freshness. The wine remains in the same tanks for a further 10 days for stabilization and settling.
Ageing
The wine rests on its lees for at least four months, with weekly stirring to retain its light character. The 2025 vintage was bottled in December.
Tasting profile
Delicate floral and fruity notes accompany lively acidity, a soft texture and a fresh, mineral character. The style is light and fresh.
Serving and pairing
Suitable as an aperitif or at the beginning of a meal.
Label / history
The name refers to the Baroque-era dance that traditionally opened a ball.
