Vineyard and terroir

The wine comes from Tenuta Plozner at Barbeano di Spilimbergo, in the Grave DOC area. The vineyard has gravelly alluvial soil and Guyot-trained vines with north–south exposure.

Grapes

Sauvignon Blanc.

Vinification

The grapes are harvested mechanically slightly before physiological ripeness to emphasize their vegetal character. Soft pressing is followed by classic white-wine vinification and fermentation at a controlled temperature of approximately 18 °C.

Ageing

The wine matures in stainless steel and subsequently in bottle to develop its aromas.

Tasting profile

Straw yellow. The varietal bouquet has pronounced vegetal notes of sage, green pepper, nettle, tomato leaf and boxwood. The palate is long and fresh, with an acidic line recalling the aromas perceived on the nose. The finish is complex, persistent and subtly vegetal.

Serving and pairing

Serve at 8–10 °C. Pair with delicate first courses based on spring vegetables, lean starters, soups and risottos. Eggs with asparagus are a particularly suitable match.
