Vineyard and terroir
The vines are Guyot-trained, average approximately 60 years of age and grow at about 550 m on sandy, silty soils. Planting density is 4,500 vines/ha and grape yield is approximately 8,000 kg/ha, with a must-to-fruit ratio of about 70%. Values may change with the vintage.
Grapes
100% Nebbiolo. The grapes are harvested and selected by hand, without a drying period.
Vinification
The wine remains on the skins for five days. Vinification is associated with large barrels and concrete tanks in the technical sheet.
Ageing
The product presentation specifies 36 months in chestnut casks. The technical sheet describes ageing or vinification in large barrels and concrete tanks but does not give a duration.
Technical data
Approximately 13.0% alcohol, 28 g/L dry extract, 5.5 g/L total acidity and less than 1 g/L total sugar. Production is approximately 60,000 bottles. These figures may vary by vintage. Formats shown are 75 and 150 cl, while the technical sheet lists 75 cl. Suggested shelf life is eight years.
Tasting profile
Garnet red. A mellow opening brings delicate wild-berry and blackcurrant aromas. The palate is rustic and intense, with associations of worked leather and a lit fireplace. Ripe fruit accompanies a balanced structure, while the finish is savoury, dry, straightforward and persistent without excessive exuberance.
Serving and pairing
Serve at 18 °C. Its freshness and immediate drinkability suit cured-meat appetisers, soups, vegetable flans, meats, creamy dishes and cheeses.
