Vineyard and terroir

The 2021 fruit came from vineyards at 470 m a.s.l., rooted in a mixture of deep, clay-rich soils with good water-holding capacity. Vines are trained to spurred cordon and Guyot. Farming is organic and sustainable. Green manure and cover crops are used when required to balance nutrients, improve soil porosity and limit erosion. Pruning is adapted to vine age, soil, vigour and exposure. Copper, sulphur and natural antagonists are used against pathogens, while natural manure and plant-strengthening preparations support soil and vine health.

Grapes

Cabernet Sauvignon and Sangiovese meet as equal stylistic partners: Sangiovese supplies energy and a sense of place, while Cabernet Sauvignon contributes broader, more enveloping structure.

Vinification

For 2021, the two varieties were picked by hand between 18 September and 12 October and vinified separately. Fermentations proceeded regularly, followed by long macerations and delicate extraction designed to preserve the vintage’s phenolic potential.

Ageing

Sangiovese and Cabernet Sauvignon matured separately for 18 months in 500-L French oak tonneaux. The components were blended before bottling and refined for a further four months in bottle. The wine was bottled unfiltered in December 2024.

Vintage notes

A cold winter and cooler-than-average spring delayed budbreak in 2021. Abundant rain during the growing season helped the vines achieve balance and supported polyphenolic accumulation and full ripeness. Pronounced day-to-night temperature shifts in September and October further enhanced the phenolic character of the individual vineyards.
