Vineyard and terroir
The 3-hectare vineyard occupies the hills of central Tuscany. Its deep, medium-textured soil is rich in sand and contains limestone-derived stones. The east-facing site lies at an average altitude of 250 metres. The five-year-old vines are planted at 5,000 vines per hectare and trained to Guyot, producing an average of 1.8 kg per vine.
Grapes
100% Ansonica Toscana.
Vinification
Harvest takes place in mid-September. The grapes remain with their skins during 12 hours of cold maceration in the press, followed by gentle pressing and clarification. Fermentation occurs in stainless steel.
Ageing
Two months in stainless steel.
Tasting profile
Deep straw yellow with yellow-green reflections that lose some of their green tint over time. The fresh, floral and fruity nose evokes hawthorn, peach blossom, green apple and white peach, with light notes of acacia honey, broom and undergrowth. The palate is pleasant and balanced, with rounded, subtly aromatic notes, good minerality and savouriness, and a persistent finish.
Serving and pairing
Serve at 8–10°C as an aperitif or with steamed or salt-baked fish. Pair also with white meat cooked without tomato, particularly lemon chicken breast.
