Vineyard and terroir
The 3 ha vineyard lies in the hills of central Tuscany around Gaiole in Chianti, at an average elevation of 450 m a.s.l. It has an eastern exposure and deep, medium-textured soil rich in sand, with abundant limestone fragments. The vines are five years old, planted at 5,000 vines per hectare and trained using Guyot cane pruning. Average yield is 1.8 kg per vine.
Grapes
100% Malvasia Toscana. This dry, varietal expression emphasizes the grape’s gently aromatic character, roundness and impression of sweetness.
Vinification
Harvest takes place in mid-September. The grapes undergo 12 hours of cold skin maceration in the press, followed by gentle pressing and clarification. Fermentation takes place in stainless steel.
Ageing
The wine matures in stainless steel for two months.
Tasting profile
Deep straw yellow with yellow-green reflections; the green shade gradually diminishes over time. The aroma is fresh, floral and fruity, combining hawthorn and peach blossom with green apple and white peach. Subtle notes of acacia honey, broom and undergrowth form the background. The palate is pleasant and balanced, with sweet-toned, lightly aromatic nuances characteristic of Malvasia Toscana. Minerality and savoury character extend the finish.
Serving and pairing
Serve at 8–10°C. Suitable as an aperitif and with steamed or salt-baked fish, white meats—especially dishes prepared without tomato—and lemon chicken breast.
