Vineyard and terroir
The 3-hectare vineyard lies in the hills of central Tuscany. Its deep, medium-textured soil is rich in sand and limestone fragments. It faces east at an average altitude of 450 metres. The five-year-old vines are planted at 5,000 vines per hectare and are cane-pruned, with an average yield of 1.8 kg per vine.
Grapes
100% Malvasia Toscana. This Tuscan variety, traditionally associated with passito wines or blends, is vinified here on its own.
Vinification
Harvest takes place in mid-September. The grapes undergo 12 hours of cold skin maceration in the press, followed by gentle pressing and clarification. Fermentation takes place in stainless steel.
Ageing
Two months in stainless steel.
Tasting profile
Deep straw yellow with yellow-green reflections that gradually lose their green tint with time. The nose is fresh, floral and fruity, with hawthorn, peach blossom, green apple and white peach over delicate notes of acacia honey, broom and undergrowth. The palate is balanced and rounded, showing sweet, gently aromatic notes typical of Malvasia Toscana. Minerality and savouriness extend the finish.
Serving and pairing
Serve at 8–10°C as an aperitif or with steamed or salt-baked fish. It also suits white meat prepared without tomato, particularly lemon chicken breast.
