Vineyard and terroir
The grapes come from Vigneto “Volpe” in Ruffoli, Greve in Chianti, in the province of Florence. The hillside vineyard lies at an average elevation of 400 m and faces south. Its sandy-silty soil contains a particularly high proportion of stones. The vines are listed as seven years old. Training is predominantly low spur-pruned cordon, with Guyot used for Cabernet Franc. Vittorio Fiore and his sons are the growers.
Grapes
An equal-parts Bordeaux-variety blend: 25% Merlot, 25% Cabernet Sauvignon, 25% Cabernet Franc and 25% Petit Verdot.
Vinification
Harvest takes place in late September. Alcoholic fermentation lasts 12 days in stainless-steel tanks. Bottling is carried out in June or July.
Ageing
The wine matures for 18 months in 225-litre barriques, followed by at least eight months in bottle.
Technical data
The current wine page gives an alcohol content of 13.5%, while the technical sheet gives 13%. Average annual production is 1,500–1,800 bottles of 750 ml. The wine is supplied in six-bottle cartons; six-bottle wooden cases are available on request.
Tasting profile
The aromatic profile is refined and complex. The palate is suave and velvety while retaining an austere character.
Label / history
First produced in 2007, Capogatto originated as a personal challenge for Jurij Fiore, a winemaker trained in Burgundy, to work with varieties of Bordeaux origin.
