Vineyard and terroir
The grapes come from the Carbonaione vineyard at Ruffoli in Greve in Chianti. The terraced hillside site lies at an average elevation of 450 m above sea level and faces west and southwest. Its sandy-silty soil contains a very high proportion of stones. The vines are more than 80 years old and are trained using Guyot and spurred-cordon systems. Vittorio Fiore and his sons cultivate the vineyard.
Grapes
Sangiovese di Lamole.
Vinification
Harvest takes place during the first half of October. Alcoholic fermentation lasts 12 days in stainless-steel tanks. Bottling is carried out in June or July.
Ageing
The wine matures for 14 months in 350-litre tonneaux, followed by at least six months in bottle.
Technical data
Alcohol: 13%. Average annual production is 25,000 bottles of 750 ml. Available formats are 750 ml, 1.5 L, 3 L, 6 L and 12 L; a wooden case containing six 750 ml bottles is available on request.

Il Carbonaione was conceived by Vittorio Fiore after many years of study and professional experience, bringing together Sangiovese and the vineyards of Ruffoli. Vittorio and his son Jurij oversee its production. The first vintage was 1992.
