Vineyard and terroir
The sparkling wine is made exclusively from estate-grown Sangiovese in Montalcino.
Grapes
100% Sangiovese.
Vinification
Whole bunches are picked by hand into crates and gently pressed. Pressing is the sole period of contact between juice and skins, producing the pale pink colour. Fermentation takes place in temperature-controlled stainless-steel tanks. The base wines are then selected before tirage.
Ageing
The wine remains on its lees for at least 24 months in the ancient cellars at Sant’Angelo in Colle, where temperature and humidity remain constant. After disgorgement, it rests in bottle for a further two months. The dosage liqueur contains no added sugar, resulting in a Pas Dosé style.
Tasting profile
Pale pink. The nose is elegant and fresh, with small red berries, citrus accents and underlying breadth. The palate is juicy and notably fresh, carrying the fruit forward with a clean, dry profile. The long finish is gently bitter and citrus-led.
Serving and pairing
Serve at 6–8 °C. Pair with smoked salmon, cured meats, fresh cheeses or traditional Tuscan first courses.
Label / history
Created in honour of Marchesa Clementina, grandmother of Leopoldo and Livia Franceschi. Her appreciation of fine Champagne inspired this Metodo Classico from Montalcino. The first vintage was 2014.
