Questo vino

Vineyard and terroir

The fruit comes exclusively from Vigna Paganelli, the estate’s oldest vineyard, planted in 1964. Its old Sangiovese vines serve as a clonal reference for the planting of newer vineyards. The wine is made only in the best vintages and in limited quantities. Vines are trained using the doppio capovolto system.

Grapes

100% Sangiovese. The best and ripest bunches are selected individually and harvested by hand.

Vinification

The 2020 underwent 20 days of submerged-cap fermentation in stainless-steel tanks. Indigenous yeasts were used, with fermentation temperature controlled at 25–28 °C. Malolactic fermentation also took place in stainless steel.

Ageing

The wine matures for an extended period in large French-oak casks, followed by further ageing in bottle.

Technical data

Latest published vintage: 2020. Alcohol: 15% vol.

Tasting profile

Intense ruby red. The core profile combines an elegant bouquet of red fruit, leather and spices with a persistent, balanced palate and a long finish. Published tasting notes for the 2020 add dried black cherry, pomegranate, cherry, raspberry and plum alongside dark wood, dusty earth, brown spice, tar, blood orange, roasted spice, forest-floor and mineral nuances. The palate is deep and concentrated, with cooling acidity and dense, assertive tannins. Its tightly structured, powerful finish retains freshness and length.

Serving and pairing

Pair with red meats, game—particularly with mushrooms or truffles—and mature cheeses.

Vintage notes

The 2020 is presented as a fruit-forward vintage in which the wine is somewhat softer and more streamlined, while retaining firm tannins and the structure required for prolonged ageing. The official vintage selector also presents 2019, 2016, 2015, 2012 and 2010.
