Vineyard and terroir

Produced in the Florentine hills around Fiesole, Tuscany. The vineyards are farmed organically on lean soils containing Galestro and limestone. Vines are trained using low-spurred cordon and Guyot systems. The wine is certified by ICEA for compliance with EU organic-farming regulations EC 834/07 and EC 889/08.

Trebbiano Toscano and Verdicchio.

Vinification

The grapes are picked by hand in mid-September. Harvesting and selection are conducted carefully to preserve the berries, limit oxidation and prevent unwanted fermentation. The fruit is soft-pressed immediately to retain freshness and primary aromas. Fermentation takes place in stainless-steel tanks at controlled temperature.

Tasting profile

Intense straw yellow with golden reflections. Mineral and citrus aromas include grapefruit and gentle spicy nuances. The palate is dry, savoury and harmonious, with pronounced persistence and a pleasantly bitter grapefruit note on the finish. Its intense flavours continue to develop in the glass.

Serving and pairing

Serve at 12–14 °C. Pair with raw or grilled fish, white meat, liver, mushrooms, truffles and soft cheeses. It is especially suitable for fish dishes with enough richness to call for a medium- to full-bodied wine. Best consumed within four years of harvest.

Label / history

During the 1980s, Mauro Galardi sought to create a white wine suited to Tuscan flavours by combining Trebbiano Toscano with an Italian variety capable of contributing greater intensity and persistence. He planted Verdicchio at Poggiopiano in 1987 and, drawing on his research and studies by the University of Florence, asked the Regione Toscana to add Verdicchio to the varieties permitted for Bianco di Toscana I.G.T.
