Questo vino
Vineyard and terroir
The grapes come from the Florentine hills around Fiesole in Tuscany. The vineyard soils are lean, with Galestro and limestone. Vines are trained using low-spurred cordon and Guyot systems and are cultivated organically. The wine carries ICEA organic certification under EU Regulations EC 834/07 and EC 889/08.
Grapes
100% Sangiovese. The Riserva is conceived as Poggiopiano’s fullest expression of the variety, beginning with rigorous selection of the grapes and continuing with selection of the wines during maturation in the cellar.
Vinification
The grapes are harvested by hand in late September and carefully selected. Fermentation takes place in temperature-controlled stainless-steel tanks. Pump-overs are continuously and directly supervised to manage extraction gently and efficiently during skin contact, with the aim of retaining intense fruit aromas and supple tannins.
Ageing
The wine is refined in second-use barrels and then spends at least 12 months in bottle before release.
Tasting profile
Garnet red with fine tonality and brightness. The bouquet combines red fruit with spices. The palate opens softly and in balance, then develops into a harmonious, persistent finish.
Serving and pairing
Serve at 18°C. Pair with flavourful dishes that are not excessively intense; grilled red meat is a particularly suitable match. Best enjoyed within 10 years of the harvest.
