Vineyard and terroir

The grapes come from the Florentine hills around Fiesole in Tuscany. The lean soils contain Galestro and limestone. Vines are trained using low-spurred cordon and Guyot systems and are managed organically. The wine is certified by ICEA under the cited EU organic regulations.

Grapes

Trebbiano Toscano and Verdicchio. Mauro Galardi planted Verdicchio at Poggiopiano in 1987, intending to produce a wine suited to the local cuisine.

Vinification

The grapes are hand-picked in the second half of September. Selection in the vineyard and the subsequent winemaking are directed toward retaining and expressing the tannins, phenolic compounds, aromas and aroma precursors found in the skins and seeds. Fermentation takes place in stainless-steel tanks in contact with the skins, with manual punch-downs. Maceration lasts from three to eight weeks according to the vintage.

Ageing

The wine matures in second-use barriques and subsequently spends at least 12 months in bottle.

Tasting profile

Amber yellow in color. The intense aromatic profile combines herbs, dried apricot, dried fig, almond, chamomile and honey. The palate is rounded, harmonious and persistent, with balanced tannins and acidity. Sweet almond and dried-fruit notes shape the finish.

Serving and pairing

Serve at 16 °C. Pair with strongly flavored soft cheeses, game pâtés, white meat or salmon. The wine is described as having strong potential for extended maturation.

Label / history

In 2016, Mauro Galardi and his daughter Martina began developing this long-maceration white wine, seeking to give greater value to the skins and seeds that are normally separated at the beginning of white-wine fermentation.
