Vineyard and terroir
The fruit comes from the Florentine hills around Fiesole in Tuscany. The vineyards have lean soils containing Galestro and limestone. Vines are trained as low-spurred cordon and Guyot and are farmed organically. The wine is ICEA certified under EU organic regulations EC 834/07 and EC 889/08.
Grapes
A blend of Merlot and Cabernet Sauvignon. The grapes are selected in the vineyard and harvested by hand between late August and early October.
Vinification
Winemaking is directed toward preserving intense fruit aromas and extracting the softest tannins. Fermentation takes place in temperature-controlled stainless-steel tanks, with pump-overs and délestage.
Ageing
The wine matures for 9–12 months in barrels and an 800-litre terracotta amphora from Impruneta, followed by 12–18 months in bottle. Introduced into the cellar in 2012, the porous amphora provides micro-oxygenation while limiting the influence of wood and preserving the wine’s tannic and aromatic identity.
Tasting profile
The colour is intense ruby red, developing pronounced garnet reflections with age. The nose is broad and well defined, with clear primary-fruit aromas. Ripe red-fruit flavours accompany a substantial structure, while the aromatic and flavour components come together in harmonious balance.
Serving and pairing
Serve at 18°C in a broad crystal glass after decanting. Pair with red meat, game or stewed meat. With maturity, it may also be enjoyed on its own as a meditation wine. The recommended drinking window is within 10 years of the harvest.
