Vineyard and terroir
Produced in the Florentine hills around Fiesole, Tuscany, from organically cultivated vineyards trained to low-spurred cordon and Guyot. The soils are lean, calcareous and rich in galestro.
Grapes
Sangiovese and Canaiolo, with the possible inclusion of other complementary grape varieties.
Vinification
The grapes are harvested by hand in mid-September. Fermentation takes place in stainless-steel tanks at controlled temperature.
Ageing
The wine matures in stainless steel and receives at least three months of bottle refinement before release.
Technical data
I.G.T. Rosso di Toscana. Certified organic by ICEA under EU organic-production regulations EC 834/07 and EC 889/08.
Tasting profile
Ruby red without excessive depth of colour. The aroma is pronounced and marked by elegant red-fruit notes. The palate is rounded and well structured, with clearly expressed red-fruit flavours.
Serving and pairing
Serve at 12–16 °C. Suitable throughout a meal, particularly with cured meats, medium-aged cheeses, first courses dressed with tomato-based sauces, white meats and red meats. It is ready to drink.

Com’Era was conceived as an easygoing table wine to place at the centre of a shared meal, paired with the simple but intense flavours of Tuscan cooking.
