Vineyard and terroir
The grapes come from the Florentine hills around Fiesole in Tuscany. The lean soils contain Galestro and limestone. Vines are trained using low-spurred cordon and Guyot systems and are farmed organically. ICEA certification confirms compliance with EU organic regulations EC 834/07 and EC 889/08.
Grapes
100% Sangiovese.
Vinification
The fruit is hand-picked in late August at a point selected to retain fresh, fruity aromas and lively acidity. Careful harvesting and selection protect the integrity of the berries while limiting oxidation and unwanted fermentation. The grapes are soft-pressed immediately to preserve freshness and primary fruit aromas, followed by fermentation in stainless-steel tanks at controlled temperature.
Ageing
Refined in stainless-steel tanks.
Tasting profile
Light pink in colour. The aroma is marked by red berries, particularly cranberry and pomegranate. The palate combines fresh acidity with fruity nuances. Sangiovese gives the rosé enough structure for the table while retaining an accessible, easy-drinking character.
Serving and pairing
Serve at 12–14 °C. Suitable as an aperitif and with raw, oven-cooked or fried fish, as well as white meat. Intended to be enjoyed young and is ready to drink.
