The vineyards are located around the Bolzano basin.

All vineyard work is done by hand, using organic methods, with minimal intervention from growing the vines onward.

Minimal intervention continues through to bottling. Fermentation is spontaneous, and the wines age for an extended period on the lees. They are neither filtered nor fined, and sulfur dioxide is used minimally.

Martin Goyer follows a minimal-intervention approach at every stage, from growing the vines to bottling the wine. The company's motto is "Enjoy life!" The approach is said to result in distinctive wines with immediate appeal.
