Vineyard and terroir
The vines grow 90–100 metres above sea level in clay-limestone soils with small amounts of gravel and sand.
Vinification
The grapes are harvested by hand at optimal ripeness, usually in early September. At the winery they are pressed and vinified with a long maceration. Malolactic fermentation follows.
Ageing
The wine spends a short period in small barrels after malolactic fermentation. It is bottled in March of the following year.
